We’ve teamed up with Ferrari, the leading producer of luxury Italian sparkling wine to create a special one off evening with Ferrari Trento. These wines have been handpicked and expertly paired with a stunning, four course dinner outlined below. The evening will take place on Tuesday, 12th July at 7pm in our beautiful restaurant, Terra. The dazzling four course set menu and wine pairings has been priced at £80 per person and features:
Salmon tartare with pickled cucumber and lemon salsa verde
Pairing: Ferrari Maximum blanc de blanc
The wine pairing for this dish is a brilliant straw yellow, with very intense notes of ripe fruit and hints of crusty bread and hazelnuts. It is fresh with nuances of citrus fruits and mineral sensations. Perfect to enjoy with salmon tartare.
John Dory with vanilla mashed potatoes and taggiasca and datterino sauce
Pairing: Ferrari Perle’ 2016
This pairing is elegant and complex with notes of rennet apple, white pulp peach, lychee and almond blossom. On the palate it is equally fragrant, soft, fresh and savoury, making in an excellent pairing with fish such as John Dory.
Pairing: Ferrari Perle’ Bianco Riserva 2013
This wine has is fresh and tangy with a refined mellowness deriving from its long maturation on the lees. A magnificently long finish, offering hints of white pepper and dried apricots.
Vanilla Creme brulee with poached strawberry
Pairing: Ferrari Maximum Rose’
This last pairing has a coppery appearance with a fine and persistent perlage. Delicately fragrant, with hints of berry fruits and a faintly balsamic undertone of considerable complexity. The perfect end to a meal enjoyed with a fruity creme brulee.
