Rosaria’s Traditional Tiramisù Recipe

The perfect balance of coffee and sweetness, tiramisù appropriately translates to pick-me-up.

The decadent Italian dessert is traditionally made with ladyfingers dipped in espresso, layered with a rich creamy mixture, and finished with a generous sprinkling of cocoa powder.

Culinary legend has it that tiramisù was invented in Treviso, a small city in the romantic region of Veneto (supposedly to caffeinate the Venetian lovers!). Today, the classic dolce is made across Italy in a variety of ways; many of our colleagues claim that their family’s is the best recipe. However, at Eataly, we know that at least one probably is right!

Whilst our Eataly tiramisù recipe is top secret, we have asked our Head Pastry Chef Rosaria Spina to share a traditional recipe, which is simple to make at home and hard to beat.

Eataly Tiramisu

Serves 8

Ingredients

  • 400g ladyfingers
  • 400g mascarpone cheese
  • 4 eggs
  • 100g sugar
  • 2 cups of strong coffee
  • 30g cocoa powder

Method

  1. Separate the egg yolks from the egg whites and beat egg yolks with the sugar until creamy.
  2. Beat in mascarpone cheese.
  3. Beat the egg whites until they form soft peaks and fold it into the mascarpone and egg yolk mixture.
  4. Combine coffee and sweet Marsala and dip the ladyfingers.
  5. Then take a flat dish and add alternate layers of ladyfingers and mascarpone cream.
  6. Finally sprinkle the dessert with cocoa powder.
  7. Serve chilled, and enjoy!
