The Italian colomba, meaning dove, is a traditional centrepiece for your Easter table to share with guests. Comprised of rich brioche and dusted with sugar, it is an artisanal Easter equivalent to the Christmastime panettone, embodying a rich and fluffy texture which takes at least 30 hours to rise. Once risen, the dough is baked into the distinctive dove shape to represent peace and rebirth and dressed in pearl sugar and almonds.
