Eataly Bread: how to make it at home

Making Eataly Bread in your kitchen is an experience that combines simplicity and magic . Follow this recipe step by step and you will discover how to transform a few ingredients into a fragrant and irresistible loaf.

Ingredients

  • 250 g of flour Organic bread mix made from soft wheat and durum wheat Mulino Marino
  • 175 g of water
  • 50 g of sourdough starter
  • 2 g of fresh brewer’s yeast
  • 7 g of salt
  • Bran or flour for dusting

Method

  1. The dough comes to life. In a large bowl or in the bowl of a stand mixer, pour the flour, 125 g of water, the sourdough starter and the fresh brewer’s yeast. Knead vigorously until you obtain a compact and homogeneous mass. Add the salt and gradually incorporate the remaining 50 g of water, making sure that the dough absorbs them completely. Work patiently: you will feel the consistency change under your hands.
  2. The magic of leavening . Cover the dough with a cloth and let it rise in a warm, sheltered place until it doubles in size. This is when the bread begins to transform!
  3. The perfect shape . Once it has risen, fold the dough over itself several times. This step helps to give strength to the bread and to obtain a loaf with an oval shape, smooth and compact. Place the loaf on a cloth sprinkled with bran or flour, with the seam facing upwards. Cover it well and transfer it to the refrigerator for at least 5-6 hours. This rest will make it more stable and give it a unique structure. Tip : You can obtain the bran by sifting whole wheat flour. The sifted flour that remains is perfect for feeding your sourdough starter or for preparing cakes and biscuits!
  4. Baking: the highlight . Preheat the oven to 250°C. Carefully turn the bread upside down onto a baking sheet lined with baking paper. Using a sharp knife, make a cut down the center of the loaf, about 1 cm deep. This will allow the bread to expand as best it can during baking. Bake the bread for about 40 minutes, checking that it develops a golden, fragrant crust. Tip : For a perfect result, place a small pan of water on the bottom of the oven while preheating. The steam will help create a crispy and golden crust!
  5. Resting and tasting . Let the loaf cool before slicing it. It is at this point that the aromas of the flour, bran and sourdough reach their peak, and the crust becomes irresistibly crispy. Tip : Enjoy the bread when it is warm and enjoy the best of its aromas and flavors!
